  1. Step 1 - Mix the shrimp with turmeric and salt.
  2. Step 2- Heat ½ cup mustard oil on med heat and fry shrimp 1 minute per side in batches. It will get cooked again in the gravy. I used head on shrimp because a lot of the flavor will come from the head of the shrimp.
  3. Step 3- Add 4 cardamom pods, 4 cloves, 2 cinnamon barks, 4 dried red chilli deseeded. Cook for a minute till fragrant
  4. Step 4- Add 1 cup thinly sliced onion. Cook for 2 mins then add half cup onion paste and cook for 2 minutes
  5. Step 5- add 1 tsp chilli powder, ¼ tsp turmeric, 1.5 tsp garlic ginger paste and cook for 2 minutes
  6. Step 6- Add 1 bayleaf then add 1 cup coconut cream.This gravy requires a bit stirring and patience. Cover and cook for 10 minutes. Add another half cup coconut cream. Mix well and cook for another 7 to 8 minutes. Add a little bit of water to adjust the thickness of the gravy
  7. Step 7- Add ½ tsp salt. Add a teaspoon of sugar to balance the flavor. Then add the half cooked shrimp. Stir the shrimp gently. Cook only for another 3 to 4 minutes. Avoid overcooking the shrimp.
  8. Step 8 - Add a teaspoon of ghee then a few fresh green chilli for smell and flavor. Add ¼ tsp roasted cumin powder. That’s it. Enjoy with white rice or pulao !!
