  18. 2 tsp Kashmiri red chilli powder
  19. as per taste Salt
  20. 1/4 tsp garam masala powder
  21. 1 tsp kasuri methi (optional)
  22. as required fresh coriander leaves chopped

Steps to make to make Kashmiri Dum Aloo

  1. Firstly in a bowl add curd, kashmiri red chilli powder, fennel seeds powder, ginger powder, coriander powder and whisk well and keep aside.
  2. Soak cashew nuts with warm water for 15-20 mins and blend to make smooth paste. Fry the baby potatoes on medium heat.take them out on a tissue paper and let them cool for a while. After cooling prick all half fried baby potatoes from all sides with the help of a fork and again fry on medium heat until they gets nice golden colour.
  3. Now heat mustard oil in a pan, add all whole spices, stir for few seconds. Add turmeric powder, kashmiri red chilli powder (keep the flame low) immediately add curd mixture and stir continuously for few minutes.
  4. Now add cashew paste and stir well. Add salt and mix well. Cook for 2-3 mins until oil separate. (While stir occasionally) Add as required water to adjust the consistency of gravy, let it come to a boil then add fried baby potatoes and cook covered for 7-8 mins. Add kasuri methi, garam masala powder and fresh coriander and turn the flame off. Delicious kashmiri Dum Aloo is ready, serve with naan or rice.
