- 1 onion
- 1 dry red chilli
- 2 tsp peppercorns
- 1 tsp Fennel seeds
- 1 tsp cumin seeds

- 1 tsp urad dal
- 1 tsp chana dal
- 3 cloves
- 1 cardamom
- 1 cinnamon stick
- 1/2 tsp mustard seeds
- 1 tsp ginger garlic paste
- 1 pinch hing
- 1 pinch turmeric powder
- as required Curry leaves & coriander leaves
- as required Salt,
- as required water & oil

- Wash and cut cauliflower into florets. Bring water to rolling boil, add 1/4 tsp of salt and turmeric powder to it. Add the cauliflower florets, switch off the heat and keep it covered for 4-5 minutes.
- Dry roast chana dal, urad dal, fennel seeds, cumin seeds, peppercorns, coriander seeds, curry leaves, cinnamon, cloves and cardamom for 5 minutes, only on low flame. Wait till they're roasted well & nice aroma arises. Cool and grind to a coarse powder.
- Heat oil in a pan, add mustard seeds, hing, dry red chilli, when it splutters, add onion & curry leaves. Saute until onions turn transparent. Next add ginger garlic paste. Fry till the raw smell goes off. Add blanched cauliflower florets, & salt needed. Cook covered until cauliflower brown slightly on the edges for 10-15 minutes on medium heat stirring in between. Once the cauliflower is cooked, add the ground powder. Mix well. Simmer for 2 minutes. Garnish with coriander leaves.
