  2. Heat up a frying pan over the medium flame & add into it some oil & then, fry the thinly sliced onions until nicely golden browned- Strain & Set Aside
  3. Next, in the same pan: Add in some more oil (if required) & gently shallow fry the marinated bitter gourds pieces in batches, without over cluttering the pan & allow them space to get well fried, evenly- If using the potatoes then- Post frying the onions & prior to fry the bitter gourds, it’s advisable to fry the potatoes as well & strain to set aside
