Ingredients and spices that need to be Make ready to make Rajma Matar:
- 200 gm Rajma soaked overnight
- 1 1/2 cups Green Peas boiled
- 1 tsp Salt or to taste
- 2-3 tbsp Ghee
- 2 finely chopped Onions
- 2 chopped Tomatoes
- 1 Black Cardamom or Badi Elaichi
- 1 " Cinnamon stick
- 1 Bay Leaf
- 1 tsp Cumin Seeds
- 1 tsp Kashmiri Red Chilli powder
- 1/2 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 2 tbsp Malai or Cream
- 1 tsp Ginger garlic paste
- 1 small bunch chopped Coriander Leaves
- 2-3 slit Green Chillies
Instructions to make to make Rajma Matar
- Wash and soak Rajma overnight. Soak in clean drinking water and keep it covered. Do not throw this water. Pressure cook it along with the same water for 8-10 whistles with a Bay leaf and little of Salt. Keep aside until use.
- In a pan, heat Ghee and saute Onions with Ginger garlic paste. To this add slit Green Chillies and all the spices. Also add finely chopped Tomatoes and saute all of that until done or until Ghee starts separating from the sides of the pan.
- To this add, Rajma stock, which is nothing but the Rajma that was Pressure cooked. Add it as it is to the pan. Simmer until thick and done. Also add boiled Green Peas. Add chopped Coriander Leaves and adjust Salt at this stage. Also stir in 2 tablespoon of thick Cream. Cover and simmer until done.
- Enjoy this beautiful looking creamy comfort food of all times with simple boiled Rice. The combination is just out of this World.
