- 1/2 tsp cumin seeds
- 1 tsp grated ginger
- 8-9 cloves garlic (chopped)
- 1-2 fresh green chillies
- 1-2 dry red chillies
- 1 chopped onion
- 2 large diced potatoes
- 1 large bundle spinach (palak)
- 1 medium size tomato (pureed)
- to taste Salt
- 1/4 tsp turmeric powder
- 1/2 tbsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp red chilli powder as per your taste
- 1/2 tsp garam masala
- as needed Water
Instructions to make to make Aloo palak
- In a kadhai heat oil. Splutter cumin seeds. Add grated ginger and chopped garlic. Add fresh green chillies. Saute for some time. Next add chopped onion and dry red chilli.
- Saute till onion are brownish. Next add diced potatoes. Mix well. Saute without cover for some time.
- Next add salt, turmeric powder, coriander powder and cumin powder. Mix. Cook the potatoes till they are soft.
- Next into the cooked potatoes add chopped palak. Cook the palak till softened. Give a gentle mix.
- Next add pureed tomato. Give a mix and cook in slow flame till the tomato is cooked. Add red chilli powder and give a nice gentle mix. Let it be on slow flame. Check consistency. If required,add little water. Cook till your preferred consistency. Finally add garam masala. Mix gently.
- Delicious PALAK ALOO is ready to serve!! It goes well with roti/ rice/ paratha.
