- Wash and chop the mustard leaves and palak. In a pan add enough water for boiling and add washed greens. Boil for about 5 minutes on high flame, stirring occasionally.
- Strain using a strainer and immediately wash in cold water twice and let it cool.
- Blend in a mixer to a coarse mixture using 1/2 cup water.
- Heat oil in a pan, add cumin seeds when seeds crackle. Add green chilies, ginger, garlic, asafoetida, and sauté for about 20 seconds.
- Add onions, tomatoes, Raddish, and cook for about 5 minutes. Add a coarse mixture of greens and mix well.
- Add Turmeric powder, Red chili powder, maize flour to thicken the saag. Let it cook on low flame for 5-10 minutes.
