  8. 2 dry red chillies
  9. 1/2 tsp hing

  11. 2 small brinjal

  14. 1/4 cup diced pumpkin
  15. 5-6 okra or bhindi
  16. 1 tsp red chilli powder
  17. 1 tsp salt
  18. 1 tsp turmeric powder

Instructions to make to make Sambhar Dal

  1. Soak tamarind in water earlier. So soak 1 tablespoon tamarind in hot water for 20 to 30 minutes. Squeeze and extract the pulp and juice and keep them aside.
  2. Soak arhar dal for an hour and then pressure cook with salt and turmeric powder.
  3. When the dal is pressure cooking – rinse, peel, and chop the vegetables. When making sambar, chop the vegetables which get cooked faster in large sizes like pumpkin, small brinjals,okra, drumsticks.
  4. Once the oil heats up, add mustard seeds and fenugreek seeds fry until just aromatic. Ensure not to burn the seeds. Add curry leaves and dried red chilies and fry for a few seconds. Then, add hing (asafoetida) and mix.
  5. Add the onions and fry. Now, add the vegetables and sauté on high for a minute. Add chopped tomatoes and sauté on high for another 2-3minutes. Then, add turmeric powder, red chili powder, sambar powder, and mix. Sauté on medium heat for a minute.
  6. Now, add boiled and mashed dal and salt along with a cup of water and bring it to a boil. Add tamarind pulp, and some more water depending upon the consistency you need.
  7. Mix everything and simmer until vegetables are cooked through but intact. I simmer it for a good 8-10 minutes to bring out the flavours to the fullest.
