  13. 1 tbsp white sesame seeds
  14. Salt as per taste

  18. 4 tbsp oil
  19. 1/2 tsp carom seeds (ajwain)
  20. 1/4 tsp asafoetida
  21. 1/2 tsp cumin seeds

  23. 2 no. Cloves
  24. 2 whole dry red chilly
  25. 1 inch cinnamon piece
  26. 6-7 no. Finely chopped garli pods
  27. 1 inch finely chopped ginger piece
  28. 1/4 tsp turmeric powder
  29. 1 tbsp corriandar- cumin powder
  30. 1 tsp roasted cumin powder
  31. Salt as per taste
  32. 1/2 tsp garam masala
  33. 2 tsp sugar
  34. 1/4 cup finely chopped green coriander leaves
  35. 1/4 cup green part of green garlic
  36. 1/2 no. Lemon juice

Instructions to make to make Green Chickpea Curry / Cholia (Hariyali Chana Masala)

  1. Boil water along with salt and sugar. Adding sugar helps to retain green colour. Now add green chana to it and cook it for 5 to 7 minutes or until done. Do not overboil it.
  2. To prepare gravy of spinach coriander. To do spinach leaves are boiled in hot water for one minute and kept in cold water so that the color of spinach is maintained.
  3. Now take the jar of a mixer and add the prepared spinach, green coriander, white part of green garlic, pieces of green chillies and piece of ginger.
  4. Now add peanuts, white sesame seeds, salt, lemon juice and a little water, grind and make a paste.
  5. Now we will tempering sabzi.. To do this, heat oil in a pan and add carom seeds, cumin seeds and asafoetida.
  6. Now add bay leaves, cloves, dried red chillies, a piece of cinnamon, finely chopped dry garlic and finely chopped ginger, mix well and saute.
  7. Now add prepared spinach and green coriander paste and saute for 3 to 4 minutes till oil is released. Then add turmeric powder, coriander cumin powder, roasted cumin powder and salt, mix well and saute.
  8. Now add boiled green chickpeas with water, mix well, cover and cook for 5 minutes on low to medium gas flame.
  9. Now add garam masala and sugar and mix well. Then add green coriander, green garlic and mix. Then turn off the gas flame, add lemon juice and mix well.
  10. Now our healthy and nutritious green chickpeas curry are ready to serve. Garnish this sabzi with green coriander leaves and green garlic.
