- 1.5 cups maida
- 1/4th tsp Salt
- 3/4th cup water or as needed for kneading
- 1.5 tbsp oil for dough
- As needed refined oil for frying

- Grind green peas with coriander and green chili to a smooth paste, sprinkling just 1 or 2 spoons of water if needed. Heat oil in a non-stick pan. Sprinkle cumin seeds and hing. When they splutter, add the ground paste, red chili powder, roasted cumin powder, and gram flour,garam masala, salt, and sugar to taste. Fry till dry, tossing so that the stuffing doesn't stick to the pan.Set aside and cool.
- Sift flour with 1/4 th tsp salt and 1 tbsp oil. Add water gradually and knead to a soft, pliable dough. Add 1 tsp more oil and knead again. Cover and set aside for 10 minutes. Then divide the dough into lemon-sized balls.
- Flatten the ball and stuff a pebble-sized stuffing in it. Gather all ends and shape into round balls. Flatten and smear little oil and roll into round puris. Heat oil to a smoking point in a wok and fry peas or matar kachoris in high flame.
- Serve delicious Peas or Matar Kachoris in breakfast or dinner or as a snack with Dum Aloo/Aloo Dum with green peas or Chana Dal with Coconut.
