  23. 1 tbsp oil
  24. For the Spicy Tomato Masala
  25. 400 grams red tomatoes
  26. 1 cup oil
  27. 1 medium size onion
  28. 1 inch ginger
  29. 8-10 garlic cloves
  30. to taste Salt
  31. 1/2 tsp turmeric powder
  32. 1 tbsp red chilli Powder
  33. 2 tbsp coriander powder
  34. 1 tsp garam masala powder
  35. 1 black cardamom
  36. 4 green cardamom
  37. 1 tsp black pepper corns
  38. 1 tsp cumin seeds
  39. 4 cloves
  40. 1 inch cinnamon stick
  41. 1/8 th nutmeg
  42. 1 small mace
  43. Additional
  44. as required Oil for frying kabaabs
  45. 1 large egg

Steps to make to make Peas Stuffed Shami Kabaab In Spicy Tomato Masala

  1. Starting with the Shami Kabaab we have to wash the chana daal and soak it for 30 minutes so that it becomes soft and easy to cook. Then in a pressure cooker add mutton mince, soaked chana daal, ginger, garlic, dry red chillies, cumin seeds, cloves, black pepper corns, black cardamom, salt and water. Mix them well and pressure cook it for 20-25 minutes or until everything is soft and tender. You can also cook in pot but it will take more time and in that case add more water to the mixture.
  2. Once done allow it to cool down completely then grind it to a paste. After that add the chopped onions, green chillies, coriander leaves and roasted cumin powder and mix it very well. Taste and adjust the salt and spices and the Shami Kabaab mixture is ready. This can be stored in the freezer for upto a week and without onions it can be stored for 15 days in the freezer. Now let's prepare the stuffing for that in a pan heat up the oil and add all the ingredients of stuffing mentioned above.
  3. Mix them very well and cover it and cook it on low flame until the Peas softened. Once done transfer it to a bowl and allow it to cool down completely. This stuffing can also be used as a snack or in breakfast. Now take a portion of Shami Kabaab mixture and flatten it then add a tbsp of stuffing the cookes Peas and cover it from all the sides making sure that the stuffing will not come out while frying and flatten it and make the patties like shape. Like so make all the Kabaab.
  4. Once all the patties are made then start frying them dipping in egg mix for that crack an egg in a bowl and beat it. Heat up the oil in a pan once heated take a Kabaab dip it in the beaten egg from both sides and then put it in the oil. We have to shallow fry the kabaabs from both the sides until completely done and brown in colour. At this stage also you can store them for a month once it cools down completely. While frying the kabaabs make sure you do not over crowd the pan else it will broke
  5. As they are very delicate add only 4-5 kabaabs at a time. Now for the tomato masala roughly chop the tomatoes then in a pan add 1 tsp oil and add all the chopped tomatoes cover it and cook it on high flame until the tomatoes are soft and pulpy and all it's water dries out. Once done transfer it to a bowl and allow it to cool down then grind it to a very smooth paste along with all the other powdered spiced and whole spices mentioned above in the ingredient section.
  6. Make sure you grind it really smooth. Then heat up a cup of oil in a big wok once heated add the ginded spices to it and mix well then cover it and cook it on high flame for 5-6 minutes then lower the flame and cook it again for 8-10 minutes until oil oozes out and the aroma start to comes and it becomes dark red in colour start it stick to the wok and very well fried. Then add a cup of water to it and allow it to boil then lower the flame and cook it for 3-4 minutes.
  7. Then Start adding the fried kabaabs to it and cook it on low flame for 5 minutes then flip it over and again cook it for 5 minutes on that side and off the flame. Garnish it with chopped coriander leaves. Make sure you do not overlap the kabaabs. Serve it with naan, roti, chapati, paratha, kulcha, rumali roti or anything of your choice.
