Ingredients and spices that need to be Get to make Dal-Makhani:
- 200 grams mix dal (including some rajma & kabuli chana)
- 1 big size tomato chopped
- 1 chopped onion
- 2 tbsp thinly chopped ginger
- 2 tbsp thinly chopped garlic
- 2-3 chopped green chillies
- 1 tsp paanch phoron or jeera
- 1 bay leaf
- 2 dried red chillies
- Half cup fresh cream
- 2 tsp tadka masala (sunrise)
- as required Turmeric powder
- 1 tsp cumin powder
- 2 tsp coriander powder
- 2 tsp kashmiri red chilli powder
- as per taste Salt
- 1 tsp sugar
- as required Butter + Oil
- as required Chopped coriander
- as required Some butter & some cream for garnishing
Steps to make to make Dal-Makhani
- Firstly wash the lentils and let it soak overnight. Now pressure cook the lentils for 4 to 5 whistles by adding some salt and water. Now keep this boiled lentils aside.
- Now heat a pan, add some butter and oil so that the butter doesn't gets burnt. Then add paanch phoron or jeera, a bay leaf & dried red chillies. Let them splutter then add some chopped onion. Fry them for about a minute. NOTE : Paanch phoron is a Bengali mix of 5 spices including sabut jeera, kalounji, methi seeds, ajwain and sauf. Give everything a good mix, now keep this mixture in an air-tight container.
- After frying the onions for about a min then add finely chopped garlic. Cook for 1 min more then add finely chopped ginger and chopped green chillies. Cook for another minute. Then add chopped tomatoes. Keep frying the masalas for about 2 mins.
- Then add all the dry masalas like turmeric powder, coriander powder, cumin powder, salt and sugar. Now mix everything well and fry the masala until oil starts releasing from the pan.
- Then add all the boiled lentils and mix it with the masalas. Now cook for 5 mins on medium flame. Then add some tadka masala and mix it then finally add some fresh cream to it and mix it. Cook for 2 mins more then add chopped coriander and a tbsp of butter & give a final mix. Now switch off the flame. Finally garnish it with some chopped coriander and some more fresh cream. Your dal-makhani is now ready to serve. Serve it hot with tandoori roti.
