- 1 large capsicum (cut into squares)
- 2 large aloo (diced)
- 1 large Onion (chopped finely)
- 1 large tomato (diced)
- 3-4 cloves garlic (pounded)
- 1 tsp ginger (grated)
- 1 tsp cumin seeds
- to taste Salt
- 1/4 + 1/4 tsp turmeric powder
- as per taste Red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1 tbsp+ 1.5 tbsp oil
Instructions to make to make Bhindi capsicum aloo ki sabzi
- Chop the vegetables and keep all ingredients ready. Heat the kadhai with oil. Put the chopped bhindi. Add salt, turmeric powder and red chilli powder. Saute till bhindi is cooked. Take out and keep aside.

- Next heat some more oil. Splutter cumin seeds. Add finely chopped onion. Saute for some time. Next add grated ginger and pounded garlic.Saute all together. Next add diced potatoes. Put salt (add carefully as you have already added salt in bhindi). Add turmeric powder, coriander powder and red chilli powder. Mix.
- Cook the potatoes. As it's cooked,add the chopped capsicum and tomato. Cover and cook.
- As both tomato and capsicum are softened, remove the lid and give a gentle mix. Cook without cover for some time.
- Then add the sauteed bhindi. Put garam masala. Give a gentle mix. Let it be on slow flame for some time. Give occasional stir mix gently. It's ready!!
- Serve with roti/ rice/ paratha
