  9. 1 tsp red chili powder
  10. 2 tsp coriander powder
  11. 1 tsp garam masala (optional)

  1. Wash spinach properly. Chop it finely. Wash potatoes. Peel and dice into small cubes.
  2. Heat oil in a pan. Add mustard seeds let them splutter. Now add cumin seeds, garlic and red chili. Saute on low flame for a minute.
  3. Add onions and cook till they turn translucent.
  4. Add chopped potatoes. Cook covered until the potatoes are half done.
  5. Add turmeric powder, red chili powder, coriander powder and chopped spinach. Cook. The spinach will start leaving water.
  6. Let the water dries up. Add salt accordingly and garam masala. There shouldn’t be any water left at this point. Serve aloo palak with a side of roti.
