  1. Ragi Bhatura
  2. 1 cup ragi flour
  3. 1/2 cup whole wheat flour
  4. 1/2 cup whey/ curd
  5. 1 tsp sugar
  6. to taste Salt
  7. 1 tsp oil
  8. 1 tsp baking powder
  9. as required oil for deep frying
  10. Chole
  11. 1 cup chole
  12. 1 onion
  13. 1 cup tomato puree
  14. 1 tbsp ginger garlic paste
  15. 1 tsp turmeric powder
  16. 1 tsp red chili powder
  17. 1 tablespoon coriander powder
  18. 1 tablespoon chole masala
  19. 1 tsp anardana powder
  20. 1 tsp jaggery
  21. 1 bay leaf
  22. 1 inch cinnamon stick
  23. 1 big cardamom
  24. 1 tablespoon oil
  25. to taste Salt
  26. 1 tsp cumin seeds
  27. 1 tsp kasuri methi dry

Steps to make to make Ragi Bhatura with Chole

  1. For making the bhatura dough. Take ragi flour, whole wheat flour,curd/ whey, baking powder, salt, sugar and oil in a mixing bowl. Knead well. Now add warm water as required to knead a dough. Keep it covered with a muslin cloth for fermentation for 3-4 hours.
  2. Wash and soak chole overnight or for at least 5 hours. Drain the water.
  3. Now in a pressure cooker, take soaked chole, black cardamom and cinnamon stick. Add 3 cups of water or until the chole is dipped well in the water. Pressure cook for 5 whistles on medium flame.
  4. Now heat oil in a deep bottom pan. Add cumin seeds and bey leaf. Saute. Add ginger garlic paste saute and add chopped onion. Cook until the onion turns slightly brown. Add tomato puree salt and cook covered till the oil seperates out.
  5. Now add turmeric powder, red chili powder, coriander powder, chole/chana masala, anardana powder and jaggery. Add the boiled chole along with the water. Cook for 10 minutes. Add kasuri methi and the chole is done.
  6. For bhatura, heat enough oil for frying in a deep kadhai. Before dropping the bhatura make sure that the oil is hot enough. To test, just drop a small pinch of the dough in the oil and it should immediately fry and come to the top.
  7. Roll out thick bhaturas.
  8. Slowly slide the bhatura into the oil and slightly press the bhatura with the ladle the bhatura will fluff up.
  9. Serve it with the better half chole and Enjoy it Hot!
