  3. 2 cups + more jaggery
  4. 1 tsp salt,

  1. Soak rice overnight and grind into paste, can be kept bit coarse.
  2. Add salt + sugar + water to form a thick and dropping consistency, just like idly batter consistency. Keep rest for 10 - 15 minutes for sugar to melt.
  3. In a heavy bottom deep pan, add milk and give 4-5 times boil and then simmer under medium flame to thicken it. Stir continuously as milk tends to burn, then add jaggery and mix well. We need a medium thick milk. Lastly add the cardamom powder also and mix it.
  4. Take a Appe pan, grease oil in each mould and fill with 2 tbsp of rice mixture, cover and cook. Flip and cook the other side too.
  5. Now drop the dumplings in the thickened milk and boil for 4-5 minutes and keep it overnight.
  6. CHITOI PITHA is ready to serve.
